Displaying/Hiding Panels (example of what I want included)

Stuck on how to do this. When I try to disable panels, they don't disappear in the canvas.

This is sort of what I want to be able to do



Any links to tutorials demonstrating how to do that would be good

ie, a menu that gives some options, and you select an option and a new panel opens with some other options.
